Strawberry Cheesecake Cupcake~

Recipe 3 : Strawberry Cheesecake Cupcake

By now ive probably made about 50 cupcakes... and every1 in my house is so sick of them..
anyway..heres the third recipe~

the cake bit is just a regular vanila sponge with some bits of strawberry...

My verdict : 7/10
I think itll be niceer if it was more strawberry cheesecake-ish as the name suggests...
by making a light cheese flavoured sponge and a strawberry frosting with a layer of biscuit sandwiched in between?
or perhaps a more strawberry flavoured sponge??
nevetheless the recipe was good...and tasty as usual...
(for those trying this recipe put 2/3 chunks of strawberry instead of a lot as it will overmoist the cupcake and the shape wont maintain)

Red Velvet mmMMMMmmmm

Recipe II : Red Velvet Cupcake
Yes!!! the sweet smell of success in the form of Red Velvet.....
made another batch after yesterday's tragedy ..and its looking oh so scarlet!


I bought a different food colouring this time...despite the recipe recommending dr oetker...i settled for waitrose's scarlet colouring...


and the cream cheese frosting...superb......i reckon it failed yesterday due to overbeating... this time it was perfect...


Verdict : 9/10 this cupcake recipe is fantastic! it was so good that i even forgotten i had a headache for that short moment eating it ...lol

(sam! this is sooo goooddd muuuaahahahhaa)

THE Red Velvet

This is the recipe that ive been looking forward to make ever since i got the book! This is THE Red Velvet cupcake which is a musteat if u were to visit the Hummingbird. I went out to buy all the ingredients...it was all going so well...i even bought a piping bag!!

this is where it all went downhill starting from the weather :( it started raining on my way back...nevertheless, i was comforting myself with the thought of cozying up with red velvet cupcakes. I started making them and my mixture :


looks ok i guess...(here u go sam ur requested pic of the mixing process)

I baked it and........it was brown..... =.=|| where did all the red go??? i went on to make the icing .... it was too runny...=.=||


This is a failure... its not even red..and the icing was too runny...i started thinking what i did wrong...
  • i bought an all natural red food coloring? i dont know if its one of the cause
  • recipe said cream cheese..is philly ok??i used philly and it was too runny.. added some mascarpone to the icing mix
  • or was it because i overbeat the icing mix? thats y it was runny?
I am not satisfied with the results at all and i will remake this recipe tomorrow with artificial red food colouring....less whisk time! hopefully itll work out tomorrow

The Journey Begins .



HeLlooooo....
Well most of you know that i have an extremely sweettooth and am always in the kitchen whisking something. I recently bought the hummingbird bakery cookbook YUM!


and I am determined to complete each and every recipe in this book and will live to blog about it before i die of diebetes or some obesity related health problems...lol

My first attempt : Lemon Cupcake!
to be honest when i first saw the recipe i was surprised with how little butter or eggs required compared to others that ive made before... anywho.. the recipe was easy and the result :


Yeah! I have to say the icing was fantastic the cake was spongy..however, i would probably prefer it to be more lemony zingy..a bit more punch to the frosting...

My verdict : 7/10 - have tasted better lemon cupcakes and even made better lemon cupcakes unfortunately..the frosting saved this 1 tho :) any1 in central london welcomed to have 1 from mykitchen.. if theres any left :p
